Francisco Alonso is a professional meat cutter known as the “Maestro Cortador†in Tenerife. He selected a leg of Iberian ham from local company Montesano. He worked on this attempt for around six hours where he only took a break to use the bathroom and hydrate. He used a snake-like technique going back and forth across the ham to keep the slice in one piece which was then wrapped around in a circle on a plate. The slice weighed 4.55 kg.
