Largest enchilada

The largest enchilada weighed 1416.144 kg (3 122.063 lbs) and was achieved at an event organised by the Gobierno Delegacional de Iztapalapa at the Explanda de Iztapalapa, Mexico City, Mexico, on 20 October 2010. The tortilla was created using a specially designed machine and measured 70 metres in length. The fillings used were chicken, courgette in a traditional spicy Salsa Verde then topped off with Avocado, Tomato and Onion.
