The breed of dairy cattle producing the highest butterfat and protein yield is the Jersey cow, native to the island of Jersey in the Channel Islands off France. It yields 4.84% butterfat in its milk, and 3.95% protein.
It may be small in size, but the Jersey cow is claimed by farmers to be the most intelligent and inquisitive of all cattle breeds, and is second only to the Friesian cattle breed in terms of popularity as well.
