The most prolific mascot in puzzle gaming is Carbuncle, who has starred in 29 different puzzle games, not counting compilations, as of 02 March 2020, according to Giantbomb.com.

Carbuncle has starred in a total of 45 games, when ports and compilations are taken into account - as well as the Madou Monogatari games, which are a series of RPGs. Though he appeared in the latter games initially, he is predominately known for the Puyo Puyo puzzle game series, which is still ongoing.
